What's Up Wednesday | November 2019

How is it already almost the end of November?! This year is flying by. I can't believe Thanksgiving is already tomorrow. And only a month until Christmas! Let's recap, shall we? What we're eating this week. Lately, my hubby and I have been eating separate dinners since I have been eating low carb and he... well, hasn't lol. What I try to do is cook in batches so he will have several meals for the week, or I will add a side to the meal that I prepare for myself and (very sadly) give it to my husband lol. Monday: Taco meat stuffed peppers and I mixed hubby's filling with rice. Tuesday: guy's night out for hubby and I ate leftovers Wednesday: cauliflower crust pizza... chicken bacon ranch version Thursday: Thanksgiving, hell yeah! Three Things | No. 3

I love when Steph does her monthly  Three Things post  and I always try to join in on the fun. So here goes!   Things I'm looking forward to  before the end of the month  1. Days off for holidays.  2. Thanksgiving. My favorite holiday!  3. De corating for Christmas... it's our Black Friday tradition.  Things I'm happy with  1. My husband recently got his days off shifted, so starting in January he will be off Thursday and Friday instead of Wednesday/Thursday! I'm so dang excited about that.  2. I'm loving how I styled our buffet table. I haven't changed it in almost 6 months and dont think I'm going to for a while, except to maybe add some winter greenery.  3. Christmas movies are on TV and I couldn't be happier about it. Hallmark channel never leaves my TV screen lol.  Things I don't understand  1.The political climate these days. Hey everyone, I can't remember where I found this fun survey but I wanted to fill it out and share with you all. These silly surveys are a great way to get to know the person behind the blog. Friday Favorites! | CEUs, recipes, new jeans, eating healthy and my new raincoat!

Hello everyone! This is my first Friday Favorites in a while, and I'm so happy to be back at it. This week was a doozy- work was insanely busy. I'm so glad its the weekend and I'm looking forward to having the time to clean my home, do laundry, walk my dog, and do some good binge watching on Netflix. Bring on the weekend! Free Continuing Education credits. I went to a continuing education workshop this week and at the end of the event, the presenter shared that she does a free journal club monthly, in which once a month she hosts a webinar meeting to discuss a published article in our field that everyone reads before the meeting. I was so pleased to find it was a free CEU event, and that I could get 12 of these CEs per year if I participate monthly. That's a huge deal! Normally CEUs range from $25.00- $100.00, so the fact that I can get almost half of my required CEs for free is so awesome. I'm really excited for our December meeting!  Sandy's Kitchen Adven

Recent favorite low-carb recipes | Big Mac salad & BBQ chicken pizza!

Hi everyone! Lately, I have been trying to eat low-carb, so I have been doing a ton of research on low-carb alternatives for my favorite foods. I've found a couple gems lately that I wanted to share with you! Big Mac Salad. You guys, I have a dirty little secret: Big Macs are my absolute favorite fast food item. I know, they're huge and gross, and SO full of fat. But they're just SO stinkin' good. I love the sauce especially. So when I came across this Big Mac salad, I knew I had to try it. And OMG is it delicious. And SO easy and quick to make- it takes only a few minutes! For the salad, you will need:  ground beef lettuce tomatoes reduced fat shredded cheese 2 dill pickle spears, chopped 1/2 tsp sesame seeds (You could also add in a yellow onion, but I omitted since I don't like onion) For the dressing, you will need:  2 Tbsp Wishbone Light Thousand Island Dressing 1/8 tsp of white wine vinegar 1/8 tsp of onion powder To make the salad:  Brown t

Hey everyone, it's been a hot minute since I've  done a weekend recap. Honestly my weekends lately have not been that interesting- but this time, I actually had a pretty full weekend! I had Wednesday through Friday off this week but my time off started off as kind of a bummer. We had been thinking about going away to New Hampshire for a couple days while I was off, but timing-wise it didn't work out and our plans fell through. So on  Wednesday, I decided to work for a few hours. I prepped for and attended a client's IEP meeting that was about an hour away so I was gone for most of the morning. During that time my husband, while working in the garage, hurt his back. We had planned to go hiking in New Hampshire the next day so unfortunately all our plans went out the window. I spent the rest of the day making sure he was OK and helping him any way that I could. Thursday was a pretty relaxed and lazy day because my husband still wasn't feeling well. We went out for
